Kale and Cranberry Salad with Brussel Sprouts

Ingredients

2 cups kale, chopped (spines removed)

4-5 Brussel sprouts, sliced thin

2 Tbsp. dried cranberries

½ green apple, sliced

¼ cup pomegranate seeds

1 Tbsp. chia seeds

1 Tbsp. sunflower seeds  

Dressing:

2 Tbsp. olive oil

2 Tbsp. apple cider vinegar

½ lemon, juiced


                                     

Directions

Combine all salad ingredients in a bowl and drizzle on dressing

Notes

Add a cooked chicken breast for some extra protein
